Cooking and preparation

Cobia's firm white flesh means it can be sliced easily. Cut into thin slices and pan fry with a dash of fresh lemon or lime, or dice and add to fish curries or soups. Thread chunks onto skewers and grill, barbecue, or simply roast. Cobia's mild flavour complements a wide range of dishes, which is just one of the reasons it is the first fish of the 21st Century.
